Joining the growing ranks of Australian Alternative Aged Spirits, our Goldfields Malt is aged using a unique method created entirely in our distillery.
We make and ferment our own wash from Australian malted barley, then double distill it in our all copper pot still.
Unlike many continuously distilled commercial spirits only 40% of the spirit we distill makes it into the final product, taking only the sweetest hearts of the batch. We then reflux treat the new make spirit with heat in the presence of american oak that we toast to our own specification. This accelerates the interactions between the wood sugars, tannins and flavours to create a unique pure malt spirit that can be enjoyed neat, with ice or water, or in your favourite cocktail.
